    Butchery, Braising and Beer Class…..Saturday, February 18th2:30 pm$95/personLimited to 12 Seats Join us Saturday, February 18th 2:30 p.m. at the Easton Public Market for a unique culinary experience as we perform the nearly lost art of craft butchery with a focus on the technique of braising.  Special guest will be Chef Jeremy Bialker of Two Rivers Brewing Co., who will be cooking alongside D&H’s own Chef/Butcher Michael Schnalzer.  Participants will watch as Jeremy and Mike create scratch samples paired with special Two Rivers craft beer selections.  During the class, you will see the the break down of a beef primal and learn how that primal leads to more familiar retail cuts.  You will also hear about sourcing, heritage and musculature of the animal and participate in a beer braising cooking demonstration.Leaving this class, you will have a better understanding of the art of butchery, foundations of braising and how to tie a roast.  You will also receive a take home braising kit, complete with roast, beer from Two Rivers Brewing, hand selected produce and provisions from the Highmark Farmstand and delicious recipes.At Dundore & Heister, we want to offer a practical approach to cooking with the traditions of the Pennsylvania Dutch.  We believe it is important to slow down and experience the togetherness that the dinner table has to offer.  This class is great for couples, aspiring home cooks and anyone interested in the art of butchery.
