Island-Focused Concept Bincho-Don to Open at Easton Public Market
Chef Kadon brings globally inspired comfort cuisine to the former More Than Q space
EASTON, Pa. — Easton Public Market (EPM) will welcome a new vendor this February 2026 with the opening of Bincho-Don, an island-focused takeout concept led by chef Kadon, whose cooking draws from Caribbean roots and a lifelong connection to island cultures around the world.
Bincho-Don will open in the former home of More Than Q, one of the Easton Public Market’s original vendors. After nearly a decade at the market, pitmaster Matt Martin made the decision to transition out of his Easton location, passing along the space — and the smoker — to Kadon as the next chapter of the space takes shape.
While Caribbean cuisine is central to the menu, Bincho-Don is best described as island-focused. Kadon’s food reflects influences from Caribbean, Guyanese, Roatán (Honduran), and Filipino cuisines, along with techniques and flavors inspired by island cultures globally. The concept is modeled after classic Caribbean takeout spots, offering rice plates with carefully prepared proteins, bold sauces, and comforting sides in a format designed for a bustling food hall.
Kadon has spent more than 12 years working his way through professional kitchens, rising from dishwasher to executive chef. Easton has become home both personally and professionally, and opening at EPM represents a meaningful milestone in his culinary journey.
“I’m incredibly excited to bring Bincho-Don to the Easton Public Market,” said Kadon. “The concept is inspired by the island foods I grew up around — Caribbean, Guyanese, Honduran, and Filipino — and the way those cultures use rice, fire, spice, and time to create comforting, soulful meals. EPM feels like the perfect place to build something community-driven, and I’m looking forward to cooking food that feels both familiar and a little unexpected.”
In addition to its globally inspired menu, Bincho-Don will emphasize collaboration within the market, sourcing from regional farmers and producers whenever possible and working alongside fellow vendors to create a welcoming, casual dining experience rooted in comfort food with depth.
“It’s a sad farewell to Matt and More than Q, having worked with him since the very beginnings of the market, but we’re excited to welcome the next chapter for that space with Kadon, and are super pumped to see the new flavors that he brings to the market and to Easton,” said Jared Mast, Executive Director of the Greaton Easton Development, operator of EPM.
